One of the best things about an easy dessert cake is that it doesn’t care what season it is and this lighter, lower-sugar version proves it. Dolly Parton’s cake with frozen berries and less sugar takes the same old-fashioned cake formula everyone loves and makes it a little more everyday-friendly, without losing any of that warm, cake texture, just like it was from Dolly’s kitchen.

Made with frozen berries instead of fruit cocktail and a reduced-sugar flour mix and lightened topping, this version is perfect for anyone who wants the comfort of a retro dessert without quite as much sweetness and it means you can make it year-round, no fresh fruit required.

Why This Recipe Works
Frozen berries are one of the best-kept secrets of cake baking. They hold their shape well, release just the right amount of juice as they bake, and are available in the freezer aisle every month of the year! No waiting for berry season. Combined with a lighter hand on the sugar, this version keeps the classic warmth of a traditional cake while feeling a little less like dessert for a crowd and a little more like a treat you can make on a regular weeknight.
What Makes It a “Dolly Parton” Recipe
This cake fits right into the same tradition as Dolly Parton’s other simple, Southern-style desserts recipes built around pantry staples, easy techniques, and big flavor with very little effort. Using frozen fruit and cutting back on sugar keeps that same unfussy spirit while making the recipe a bit more practical for regular baking.

- Cook Time: 45
- Total Time: 55
Ingredients
- 2/3 cup Sugar
- 1 cup Flour
- 1/2 cup of Milk
- 1 cup Frozen Berries
Instructions
- Whisk dry ingredients and milk together.
- Then add frozen berries
- Grease an 8×8-inch pan with cooking spray, then spread the mix until it is evenly coated.
- Bake @ 350 degrees for 45 min. Can be 40 to 60 minutes depending on your pan size and oven.
- A toothpick inserted in the center comes out clean.
- Let it cool for 10 to 15 minutes before serving warm.
- Serve it warm with ice cream, or other toppings of your choice! I topped mine with yogurt and thawed berries.
Notes
- This version of the recipe comes out more like a cake.
Note: It should be self rising flour. If you don’t have it, add one and a half teaspoons of baking powder and 1/4 teaspoon salt for each cup.
Tips for the Best Frozen Berry Cake
Don’t thaw the berries first. Frozen berries can go straight into the pan. Thawing them first can make the filling too watery.
Expect a slightly longer bake time than the fresh-fruit version, since frozen berries release more liquid as they cook.
Frequently Asked Questions
How much can I reduce the sugar without affecting the texture? Cutting the added sugar by about a third usually keeps good texture and browning. Cutting it more than that may leave the topping less crisp.
Do I need to adjust the bake time for frozen fruit? Yes, plan for about 5–10 extra minutes compared to a fresh-fruit version, and check that the topping is golden and a toothpick inserted in the center comes out clean before pulling it from the oven.
What size pan should I use? A standard 8×8-inch baking dish works best for this recipe. I used the 7 X 11 rectangular baker in my recipe; you can grab it HERE with my Walmart referral link.
