Dolly Parton's Fruit Cocktail Cake

Interest in this recipe has surged since Dolly Parton’s passing on August 25, 2026. As fans look back on her life and legacy, simple, homey recipes like this one. The kind she grew up on in East Tennessee and have taken on new meaning as a way to honor her memory.

This one is also famously known as Dolly Parton’s Cuppa Cuppa Cake from Steel Magnolias! A nod to its simple, equal-parts formula (a cup of this, a cup of that) and to Dolly Parton’s own ties to the film’s small-town Southern charm.

It’s the scene where Truvy states that it’s so simple that ‘You don’t need to write that down. That’s a cup of flour, a cup of sugar, a cup of fruit cocktail with the juice. And you mix and bake at 350 until golden bubbly.” She also suggests serving over ice cream to cut the sweetness.

This version uses just three pantry staples: sugar, flour, and a can of fruit cocktail with the juice. No butter, no eggs, no mixer. The fruit’s natural juice does the work of binding and moistening the batter, giving you a dense, sweet, old-fashioned snack cake with a texture somewhere between an upside-down cake and a cobbler.

Why This Recipe Works

The fruit cocktail’s syrup replaces the fat and eggs you’d normally need in a cake batter. As it bakes, the sugar on top caramelizes slightly while the fruit sinks and softens into little pockets throughout the cake. It’s forgiving, it’s fast to throw together, and it uses ingredients most people already have in the pantry.

Scale

Instructions

  1. Mix together
  2. Grease an 8×8-inch pan with cooking spray, then spread the mix until it is evenly coated.
  3. Bake @ 350 degrees for 45 min. Can be 40 to 60 minutes depending on your pan size and oven.
  4. A toothpick inserted in the center comes out clean.
  5. Let it cool for 10 to 15 minutes before serving warm.
  6. Serve it warm with ice cream, or other toppings of your choice!
  7. Dolly would say “Mix and bake at 350 to a gooooolden bubbly.”

Notes

  • Flour: It should be self-rising flour. If you don’t have it, add 1 and 1/2 teaspoons of baking powder and 1/4 teaspoon salt for each cup.
  • Use the juice. The syrup from the fruit cocktail is what keeps this cake moist, so don’t drain the can.
  • Topping options: A dusting of powdered sugar, a drizzle of vanilla glaze, or a scoop of vanilla ice cream all work well if you want to dress it up.
  • Storage: Keep covered at room temperature for up to 2 days, or refrigerate for up to a week. It also freezes well, tightly wrapped, for up to 2 months.
  • Variations: Some versions of this recipe add a pinch of cinnamon or a handful of chopped pecans to the batter for extra texture.

FAQs

Can I use fresh fruit instead of canned? This recipe depends on the syrup from canned fruit cocktail to activate and moisten the batter, so fresh fruit won’t give you the same texture or result. Here is Dolly Parton’s Cake with Fresh Blueberries recipe.

What is “Cuppa Cuppa Cake”? Cuppa Cuppa Cake is a nickname for this exact style of recipe “one cup of sugar, one cup of flour, one cup of fruit” — famously associated with Steel Magnolias and its Southern, no-fuss baking spirit.

Why is it called “Dolly Parton’s” fruit cocktail cake? Dolly Parton’s Southern, home-cooking roots and humble beginnings taught her family how to live on a budget. The scene in Steel Magnolias made it famous as “Dolly Parton’s Cuppa Cuppa Cake” or “Dolly Parton’s fruit cocktail cake”. The name has stuck as the recipe circulated online even though it’s really a classic depression-era-style dump cake at heart.

Can I double the recipe? Yes, double all three ingredients and bake in a 9×13-inch pan, adding a few extra minutes to the bake time.

Dolly doesn’t say self-rising flour. How do you know it’s self-rising flour? In the South, Southern cooks will just say “flour” when referring to self-rising. If they are using all-purpose, they will say “plain flour”.

I don’t like fruit cocktail. Can I use another fruit? Yes, other canned fruits like diced peaches, crushed pineapple, pears, or tropical fruit blends instead of fruit cocktail.

Can you cut down the sugar on Dolly Parton’s Cuppa Cuppa Cake? Yes, you can put 2/3 of a cup of sugar and can adjust as much as you want to.

Can I add nuts to Dolly Parton’s fruit cocktail cake? Yes, add about 1/4 cup and adjust to what you want.

What size pan should I use? A standard 8×8-inch baking dish works best for this recipe. I used the 7 X 11 rectangular baker in my recipe; you can grab it HERE with my Walmart referral link.
